Olive fruits
are picked by hands to avoid the traditional ways of picking which
affect the fruits and trees, such as using sticks. The fruits are
put in plastic boxes and then are sent to the press to be pressed
directly, under the supervision of pressing procedures which are
required to produce a high-quality olive oil such as pressing temperature,
cleanliness and changing the water used for washing the fruits repeatedly.
